One of our favorite restaurants is called Schmitty's Clam Bar in Somers Point, NJ. It is a BYOB that gives you plastic cups for your wine, benches with plastic table clothes, hole in the wall type place but it has the most amazing seafood. Besides the awesome garlic soy glazed mako shark they serve, my other favorite is their side of cold corn salad. I attempted to come up with my own version of it, and although not the exact, I thought it came out pretty darn good.
I made it for a BBQ we had Fourth of July weekend and this filled a large bowl so feel free to cut back on the amounts for a smaller portion
Ingredients:
Five cans of whole kernal corn drained well (frozen came out soggy)
1 can of black beans drained
2 jalapeno peppers chopped well
1 chopped red pepper
1 chopped green pepper
1 chopped Vidalia onion
Juice of 3-4 limes
S&P
sprinkle of cumin powder or any other spice for some kick
I would suggest you make the night before to allow the flavors to blend. Serve cold and with a side of Tostito scoops
