This dish was easy and delicious- think of it as a homemade hamburger helper but you actually know all the ingredients that go into it. I tweaked the recipe a little to have enough to feed my house full of hungry boys and it still came out great.
Adapted from Delish
INGREDIENTS
1.25 lbs ground turkey (I used 1.5 lbs of gound beef)
8 oz dry pasta + 1 cup reserved pasta water (I used 1 pound of mini shells)
1 can (14.5 oz) petite diced tomatoes
4 Tbsp mild taco seasoning (I used one and a half packs of taco seasoning with a little added cayenne pepper for some heat)
3 oz cream cheese (I used the entire block and low fat)
1/2 cup sour cream (I used the entire small container which I think is 6-8 oz)
salt & pepper
cheddar cheese to your liking ( I used half a bag of shredded cheddar in the mix ten sprinkled some on top at the end)
DIRECTIONS
Boil pasta in salted water until done to your preference. While the pasta is boiling brown the meat (drain fat if necessary). When the meat is cooked add taco seasoning and diced tomatoes. Simmer about five minutes. Then add cream cheese, sour cream, and reserved pasta water. Let simmer until the cream cheese is melted and it is warmed though, stir occasionally. Add pasta to sauce and mix well.
Garnish with shredded cheese, sour cream or hot sauce.
