Pretty easy side dish for a quick weeknight meal. Adapted from Taste of Home. I used dried herbs instead of fresh, as that was all I had in the house.
Ingredients:
2-3 garlic cloves, finely minced or grated
2 tablespoons EVOO
1/2 small yellow onion, small dice
1/2 cup uncooked orzo pasta
1/2 cup uncooked long grain rice
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
1/3 cup thinly sliced fresh basil leaves
1/4 cup minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper
Directions:
In a medium sauce pan, saute onions in EVOO over medium-high heat for 2 minutes. Add garlic, herbs, salt/pepper, orzo and rice; cook 4-6 minutes longer or until lightly browned.
Stir in broth. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
Yield: 4 servings.
