Honey-Balsamic Glazed Salmon

This was really good - and really fast.  DH is not in love with salmon, but he loved this dinner and asked if we could have it more often.  It would probably be good with any fish or even chicken (perhaps a nice wing sauce!).

Ingredients:
4 salmon filets, about 5 oz. each
1-2 tablespoons EVOO
1/3 cup balsamic vinegar
2 tablespoons honey
pinch of red pepper flakes
salt/pepper

Directions:
Pat salmon filets dry and season both sides with salt and pepper.  In a large sauce pan, heat EVOO and sear salmon on medium-high heat, about 1-2 minutes per side or until the have nice color. 

Meanwhile, heat honey for about 10-15 seconds in the microwave to make it easier to blend.  Add balsamic vinegar and red pepper flakes.  Reduce heat to avoid testing your smoke detectors.  Add vinegar mixture to salmon and simmer for 8-10 minutes, or until salmon is flaky and cooked through and vinegar has reduced to the desired thickness.
