Hawaiian Mac & Cheese

1/2 lb small shell pasta or elbow macaroni, boiled

Roux/Cheese sauce:
3T butter
2T flour
1/2 c diced onion
2c warm milk
1c swiss cheese shredded
1c cheddar (mix) shredded

Melt butter and saute onion until soft. Add flour, sprinkling over top. Whisk until a nutty brown paste forms. Slowly whisk in milk and simmer until slightly thickened. Reduce heat and whisk in cheeses until melted. Remove from heat.

Mix pasta and cheese sauce with:
1.5c diced ham
3/4c frozen peas

Put into a baking pan and top with (all ingredients stirred together and spread on top):
4 slices bread made into breadcrumbs
1 can crushed pineapple, drained until almost dry
1 pinch salt and pepper
1/2t curry powder
1t olive oil

Bake at 350 until bubbly and top is golden brown.
