Hella Good Melt in Your Mouth Rib Sandwiches

I HAVE to share this recipe that I made up tonight. It was DELECTABLE.

3lbs country style beef ribs
1t seasoned salt
2T olive oil
1 large vidalia onion - sliced into 1/2in slices
6oz white mushrooms - sliced into 1/4in slices
2 bay leaves

Preheat oven to 250 degrees.

Season ribs with seasoned salt and sear over medium high heat in a dutch oven - about 3-4 minutes on each side.


Add onions, mushrooms, and bay leaves and remove from heat.

Mix together:
1/2c ketchup
1t chopped garlic
1t worcestershire sauce
1/2t seasoned salt
1T spicy mustard
1T+ apricot jam
1T+ brown sugar
1/4t cinnamon
1/4t cumin
1/4t pepper


Pour mixture over meat and put it in the oven for 1 hour.



Play with your cooking companion for a little while.



Remove from the oven and stir after 1 hr, then again another hour later - except after the second time, remove the lid and cook for another half hour or until the meat is fall apart tender.


Use two forks to shred the meat - pulling it apart into small pieces.

Serve on a nice Italian roll with provolone cheese.
