Not a fan of creamed corn, but love cornbread, this is an easy and delish casserole that serves as a side dish at any meal.
1 medium can of creamed corn
1 medium can of regular cut corn, drained
1 stick of butter
2 eggs
1 cup of sour cream
1 box of JIffy Cornbread Mix
Mix all ingredients and add to a buttered 2 quart casserole dish and bake with the lid on (I take it off during the last 5-10 minutes)at 350 degrees for an hour.
