Cousin Chris's crab cakes

1 lb crab meat (fresh- just splurge on it)

4 scallions cut green parts only

1 tbsp chopped parsley

1 1.5 tsp old bay

3 tbsp of italian bread crumbs

1/4 cup of mayo

1 egg

salt and pepper to taste



mix meat, diced scallions, parsley, old bay, bread crumbs, mayo, s/p in a bowl with plastic spatula so the crab meat doesnt get all broken. Once it is mixed, add an egg and mix till it becomes more solid.

Cut the mixture into four sections and make 4 round cakes, the thicker the better. put in the fridge for at least three hours to chill.
once ready to make, heat up some vegetable oil, dredge the crabcakes in some flour then fry. make sure oil is hot before you put them in so they dont get soggy. fry about 5 minutes on each side till brown.

I made some horseradish mash potatoes as a side dish, so good! Just make regular mash and throw some horseradish and sour cream in at the end and whip
