TURNIPS! and Roasted Chicken

Since I was having issues with a turnip recipe I will share the one I made last week. It turned out pretty well (I overseasoned the chicken a bit). It made a lot of food for 2 people but it was quite good.

~1lb red turnips
~1lb purple top turnips
1 large yellow onion
bag of baby carrots
1 large split chicken breast
olive oil
salt/pepper
thyme
rosemary
butter

Preheat oven to 350F.

1.) Peel and chop turnips the way you would for roasted poatatoes.
2.) Coarsely chop the onion so there are big chunks
3.) Toss onion, turnips, and carrots in olive oil, rosemary, thyme, and salt/pepper. I added a bit of butter but I love butter, it can be left out.
4.) Place in oven safe baking dish. Roast for about 30 mins, add chicken broth if it looks dry, pop it back in
5.) Season chicken the same way you seasoned the turnip mix
6.) Add chicken to baking dish
7.) Cook until finished
