Italian Flat Bread/Cosi Style (Pane Carasau)


Ingredients:
1 3/4 Cups Unbleached All-Purpose Flour
1 1/2 Cups Semolina Flour
1 Envelope Active Dry Yeast
1 Cup Warm Water
Salt
Olive Oil

To Make:
1. Mix the two flours with a teaspoon of salt
2. In a separate cup/small bowl mix 1/4 warm water with yeast, wait for it to get a little bubbly, then add the rest of the warm water (3/4)
3. Mix all the ingredients together and mix/knead until you have a smooth dough
4. Cover the bowl with a wet paper towel (use warm water) and set aside for an hour
5. Knead the dough again and follow step 4 again
6. Knead the dough one last time and break it apart into 8 sections, roll each section out as flat as possible
7. Preheat the oven on 475 and "grease" up cooking pans with olive oil
8. Cook them for 5-10 minutes (they will not be fully browned)
9. Take them out and stack them on themselves and put a tray or cutting board on top to flatten them out

To serve:
1. Preheat the oven to 450
2. Coat the top of the bread with some olive oil, salt, and any other spice you wish
3. Cook the bread for about 10mins

They are best served hot! Each roll of bread is around 180 calories
