I recently saw this made on the Food Network and gave it a shot last night. It was really good! I made this for DH and myself, but you could easily double/triple the ingredients to make for 4-6 people.
Ingredients:
2 salmon filets, patted dry and seasoned with salt/pepper
1/2 yellow onion, medium dice
1-2 anchovies
a handful of pitted kalamata olives, rough dice
pinch of red pepper flakes, to taste
a handful of capers
14 oz. can of fire-roasted diced tomatoes
2 tbsp. olive oil, divided
1 large clove garlic, minced
Pre-heat your oven to 325 degrees. In a high-sided saute pan, heat 1 tbsp olive oil until shimmering. Sear salmon, about 2-3 minutes on each side or until golden brown. Place salmon on a heat-safe dish in the oven until the sauce is finished, about 10 minutes or so.
In the same saute pan, heat the remainder of the olive oil, add the anchovies and melt down. Then add the onions, garlic, red pepper flakes, capers, and olives - saute for a minute or two. Add the can of diced tomatoes and simmer for about 8 minutes. Serve over the salmon.
I had whole wheat couscous and zucchini as a side for this, but the original recipe called for lentils as a side (which I didn't have on-hand). It was really healthy, but filling dinner.
