Veal/Chicken/Sausage Scallopini

I know there are plenty of other fancy recipes out there for this but this is how we make it in our family and it's a quick and simple meal. It can be served over rice, noodles, or in a crunchy Sarcone's roll. I usually use veal cubes since it's more flavor but it can be replaced with chicken or sausage. And my MIL also adds mushrooms but we don't do funghi in our house.

Ingredients:

2 lbs of veal cubed
4-6 red and/or green peppers
1 Vidalia onion
1 can of crushed tomatoes
1 small (8 oz) can of tomato sauce- this is optional depending on how much juice you like, we are dunkers in our house so we like lots
fresh garlic
S&P
olive oil
splash of red wine (optional)

Directions:

  • saute a few cloves of chopped garlic along with chopped onion in olive oil
  • add meat. Salt and pepper, cook till brown
  • Add chopped peppers, S&P, cook about 5 minutes
  • add splash of red wine, crushed tomatoes, and can of sauce. S&P, stir
  • cook about 30 minutes or until sauce thickens
  • serve and enjoy!
