Hearty Tomato Soup

Ingredients
garlic - 2 cloves
yellow onion - 2 small
celery - 2 cups
carrots - 2 cups
olive oil
crushed tomatoes - 2 28oz cans (or fresh)
salt, pepper
fresh basil
dried thyme
3 cups of vegetable stock
heavy cream - 3 tbs

Instructions: In a large stockpot, put a drizzle of Olive Oil and your 2 garlic cloves (smashed), get that sizzling. Add your diced onion, celery, carrots, and a bit of salt. Cook for about 7 - 9 minutes over medium to high heat. Stir every so often, until carrots are soft. Stir in both cans of crushed tomatoes. Add vegetable stock.
Simmer for 30 minutes. Add fresh basil and thyme. Do not be shy about adding your herbs. Add pepper to taste. Simmer for another 30 minutes. Add 3 tbs of heavy cream. Transfer the soup to a blender or use an immersion blender to chop up the veggies.

Makes about 16 cups. Enjoy!
