Gnocchi with Broccoli Rabe

This recipe was my own concoction so the measurements may be a little off, i just judge and taste.

Ingredients:

2 lbs potato gnocchi
1 head of broccoli rabe
1-2 cups of white wine
4 cloves of garlic
olive oil
red pepper seed
s&p

Directions:

  1. set salted water to boil for gnocchi, cook as directed. Be sure to save one cup of the salted water before tossing it. It will help thicken up the sauce later
  2. boil the broccoli rabe with stems until semi soft. remove from water and cut off stems
  3. chop leaves and saute with olive oil, garlic, red pepper seeds, salt and pepper. I even throw some white wine in to give it more flavor
  4. once the gnocchi are cooked and drained, add cooked broccoli rabe along with salted water, white wine and some more s&p and red pepper seed
  5. cook about 15-20 minutes, stirring often. The starches from the pasta along with the salted water should make a slightly thicker sauce.
  6. top with parmesean cheese and serve with garlic bread
