Death by Potato

A holiday and heart attack favorite!

8 medium potatoes
1 8 oz. package of cream cheese, softened
1 16 oz. package of sour cream
1/2 of a medium onion, diced
8 slices of crisp bacon, crumbled (remember -- more bacon is ALWAYS ok)
Salt and pepper to taste
Butter

Cook bacon however you normally do (oven, griddle, etc.) and crumble when cool.

Peel and boil potatoes in salted water until tender, and then drain.

Beat together cream cheese and sour cream in large mixing bowl until smooth. (I use my Kitchen Aid).

Add potatoes one at a time to the cream cheese/sour cream mixture, and continue beating.

Stir in onions and bacon. Salt and pepper to taste.

Place in casserole dish and top with several pats of butter. I use a 9x13 to get the much delicious buttery crust top as possible.

Bake at 350 for 30 minutes.
