Baked Shrimp and Feta

I made this as an appetizer and it was awesome! Simple ingredients but so tasty. This would probably be good served over pasta or brown rice as an entree.

6-8 servings, prep time 10 minutes, cook time 40 minutes


Ingredients:
2 lbs large shrimp, peeled and deveined (I used 31/40 shrimp)
juice of 1 lemon, plus wedges for serving
6 T extra-virgin olive oil
2 small onions, finely chopped
4 cloves garlic, finely chopped
1 cup tomato puree (I used an 8oz can of tomato sauce because I didn't want to buy a giant can of tomato puree)
2 T fresh oregano leaves, chopped
1 bay leaf
1/2 tsp salt
1/2 tsp pepper
1/2 lb feta cheese, crumbled

Directions:
1. Preheat oven to 350 degrees. On a rimmed baking sheet, toss the shrimp with lemon juice and arrange in a single layer. Set aside.

2. In a large skillet, heat the olive oil over medium-high heat. Add the onions and cook until softened, about 5 minutes. Add the garlic, tomato puree, oregano, bay leaf, salt and pepper. Lower the heat and simmer for 15 minutes.

3. Discard the bay leaf and pour the sauce of the shrimp (it will be kind of chunky). Sprinkle the feta on top. Bake in the oven for 15 minutes, then place under a broiler until the feta is lightly browned, 3 to 5 minutes. Serve with lemon wedges.
